The first mention of the appearance of kvass was found in manuscripts and graffiti on the walls of the pyramids of ancient Egyptian civilization in the 3rd millennium BC. Kvass is found in the writings of all ancient civilizations, as an amazing drink, restoring strength and quenching thirst.
Today you can see a huge variety of kvass made in factories according to different recipes based on a wide range of products. But the principle of preparation in all cases remains the same, which gives it such incredible qualities. And every time a glass is filled with this delicious drink, we can ask ourselves the question: So how do kvass?
Interesting fact: In Russia, kvass is known more than 1000 years ago. In ancient Russian written sources dating back to 996 it was written: Prince Vladimir I Svyatoslavich, after the baptism of Rus, ordered to calm people down to distribute “food, honey and kvass” to the people!
What is kvass made of?
Today on the shelves of shops you can find kvass made from a variety of food products. But the principle of preparation is the same for all types of drink. Therefore, we consider the technological process of production on the example of the manufacture of factory malt kvass.
For its preparation, fresh barley is delivered to the plant. It is passed through a coarse cleaning system to remove debris and foreign objects. Water for the preparation of drinks using purified from chemical impurities and small debris. All prepared ingredients are loaded into separate containers or storage containers and sent to the stage of malt preparation.
Malt preparation
Barley is loaded into a special container and prepared water is added to it. Metal blades mix the contents so that the water is well saturated with air bubbles. The procedure is necessary so that barley can sprout in the next step. After some time, the operator completes the procedure, removes excess water and sends the contents of the tank to the germination stage.
Barley is placed in a huge apparatus, in which conditions are created for its germination. According to a certain algorithm, it is mixed, moistened and warmed until young roots appear on each grain. When the root reaches grain size, it becomes malt ready for the next cooking step. After laboratory control, the malt is sent for drying and heat treatment.
Making kvass wort
Ready malt is sent to the elevator, where, under the influence of friction and mechanical pressure, a sprout is separated from each grain. The finished mass passes through a sieve system, where the sprouts are separated from the grain. Grains are sent to the mechanism for grinding to a powder state. The powder is mixed with water until a liquid consistency is obtained and boiled in special metal containers for about 6 hours.
After operator control, the formed wort is defended. To obtain a special bread flavor, rye malt is added to the barley wort at the cooking stage. The proportions are observed in such a way that starch is formed in the process, which should turn into sugar, and the water is saturated with a wonderful aroma. Now fresh wort is sent to the fermentation shop.
Wort fermentation
Prepared wort is poured into huge sealed cylindrical conical containers, to which specially diluted yeast is added. Within 10 days, the wort settles and is brought to receive kvass. At the end of the period, kvass is passed through a purification system in which an installed kieselguhr filter is used to separate solid biological structures from liquid kvass. The result is a clean drink ready for packaging in plastic or glass containers.
Interesting fact: Since ancient times, a variety of cold dishes have been prepared on the basis of kvass, such as okroshka, tops, turkey, putra, chorba, zama and others.
Kvass spill
Ready kvass goes through the stage of pasteurization and laboratory research. After quality control, it is poured into darkened containers and sent to the shelves of shops and supermarkets.
